So, the 5000 response limit is actually the limit imposed by Google Spreadsheets on the number of cells allowed in a sheet, which is 100,000. If you start with a sheet that has 20 columns (all new sheets do), then it's going to bonk after 5000 because of that limit. But say you have 5 questions. Including the timestamp column thats only 6. 100,000 / 6 = a lot more than 5000.

Go to the published form page (viewform?key=blah) and view source on that. It's very simple html that you can copy into your own site or anywhere else for that matter and do validation, custom styling, whatever. It's just a matter of making that clear and easy for everyone else that's the key.
